This recipe will guide you through the process of creating your very own sourdough loaf from scratch, using a basic sourdough starter. If you haven't prepared a starter yet, remember it typically takes about 5 to 7 days to develop one that's active and ready for baking. Now, let's get started!
Classic Sourdough Bread Recipe
Ingredients:
For the Starter:
1 cup (120g) all-purpose flour
1/2 cup (120ml) water (room temperature)
(Note: If you already have an active sourdough starter, you can skip the starter preparation part and use 1 cup of your active starter for this recipe.)
For the Dough:
1 cup (240ml) active sourdough starter
1 1/2 cups (360ml) lukewarm water
4 cups (480g) all-purpose flour, plus more for dusting
1 to 2 teaspoons salt (adjust to taste)
Instructions:
Preparing Your Starter (Skip if you already have one):
Day 1: Mix the flour and water in a jar or a bowl until smooth. Cover loosely and let it sit at room temperature for 24 hours.
Day 2-5: Feed your starter daily by discarding half of it and adding 1/2 cup of flour and 1/4 cup of water each time. By day 5, your starter should be bubbly and ready for baking.
Making the Dough:
Mix: In a large mixing bowl, combine the active sourdough starter and lukewarm water. Add the flour and salt, mixing until a shaggy dough forms.
Knead: Turn the dough out onto a floured surface and knead for about 10 minutes, or until it becomes smooth and elastic.
First Rise: Place the dough in a lightly oiled bowl, cover with a damp towel, and let it rise at room temperature for about 4 to 8 hours, or until it doubles in size.
Shape: After the first rise, gently punch down the dough to release any air bubbles. Shape it into a round loaf by folding the dough under itself.
Second Rise: Place the shaped dough onto a well-floured surface or a baking cloth, cover with the towel again, and let it rise for another 2 to 4 hours.
Preheat and Bake: Preheat your oven to 450°F (230°C). If you have a Dutch oven, place it in the oven as it preheats. Once the dough has risen and the oven is hot, carefully transfer the dough into the Dutch oven (or onto a baking sheet if you don’t have one).
