Awesome Keto Brownies!
Let me start my confessing that I don't try to follow a Keto diet; although, I recognize that there are a lot of benefits from low carb diets, and I found an amazing recipe that I didn't think would be all that delicious when I saw the ingredients.  I try to keep an open mind until I've actually tried something, though; so I made them and was totally surprised at how absolutely Delicious they are.  

I was looking for some desserts that we would like that are sugar free, and I happened upon this recipe.  The amazing thing about it, besides how delicious they are, is each brownie provides 15.3 grams of good fat, 2.7 grams net carbs and 4.5 grams of protein!

The recipe uses no flour, so gluten free is on the table.  And although the recipe calls for 2 Tablespoons of Almond butter, I have also made these without that ingredient and they were still just as delicious - so, those with nut allergies can still partake!  

Okay, let's get to the good stuff - how to make them!

Ingredients:
  • 2 large eggs
  • 1 medium avocado
  • 4 tablespoons butter, melted
  • 4 tablespoons almond butter (optional)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup either Monkfruit or Stevia powder
  • 1 teaspoon vanilla extract
I like to pulse the avocado in a food processor until there are no visible lumps.  Then I combine all the ingredients and hand mix together - do not overmix or they will become cakey.  Transfer the batter to a loaf pan lined with parchment paper.  (I like to double the ingredients and put in a 9 x 9 baking dish)  Bake at 350 for 25 minutes, or until the edges begin to separate from the side.  I found that with my oven, I had to continue baking at least another five minutes.  

Remove from the oven and let cool for 10-15 minutes.  Slice into squares and store leftovers (if you have any) in an airtight container in the fridge for up to a week. 

I like to add a drop or two of Vitality Essential Oils for some added flavor - Peppermint Vitality and Orange Vitality are my favorite to mix with chocolate!
